Baked Pecorino Toscano with Honey, Walnuts & Thyme

Ingredients:

For the cheese:

  • 6 oz Pecorino Toscano PDO
  • 1/4 cup walnuts
  • 2 tbsp honey
  • Fresh thyme
  • Flaky sea salt

For the baguette crostini:

  • 1 demi baguette
  • 3 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Preparation:

  1. Slice the baguette and season with olive oil, salt, and black pepper. Toast in a pan on both sides until golden and crisp.
  2. Preheat the oven to 450°F (230°C).
  3. Slice the Pecorino Toscano and place it in a baking dish.
  4. Bake for about 12 minutes.
  5. Add the walnuts and thyme, then bake for a few more minutes.
  6. Finish with a generous drizzle of honey and a sprinkle of flaky sea salt.
  7. Serve immediately with the warm crostini.
