Taleggio Mac N’ Cheese

Ingredients:

(For 4 people)

Recipe:

  • 2 cups macaroni (cooked)
  • 12 oz of Taleggio, cubed
  • 1 tsp garlic powder
  • Pinch of nutmeg
  • 1 tsp salt
  • 2 1/2 cups milk
  • 2 tbsp butter
  • 2 tbsp flour
  • Extra pieces of Taleggio on top

Topping:

  • 1 cup breadcrumbs
  • Garlic powder
  • Fresh parsley
  • Pinch of salt and pepper

Preparation:

  1. Cook your pasta according to package instructions.
  2. Melt butter in a saucepan over medium-low heat. Add the flour and whisk constantly to form a roux.
  3. Gradually whisk in the milk, whisking until the mixture is smooth.
  4. Bring to a simmer, stirring frequently until the sauce thickens.
  5. Add in your cubed Taleggio and stir until fully melted.
  6. Remove from heat and add salt, garlic powder, and nutmeg. Stir to combine.
  7. Mix the sauce with the cooked macaroni.
  8. Transfer to a baking dish, add the breadcrumb topping, and place extra pieces of Taleggio on top.
  9. Bake at 350°F for 15–20 minutes, or until the top is golden and the Taleggio has melted.

Optional: broil for a few minutes.
